- 2 pounds red potatoes
- ½ medium yellow onion
- 3 Tablespoons vegetable oil
- 1 ½ teaspoons dried parsley
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ¾ teaspoon kosher salt
- ¼ teaspoon black pepper
- 6 ounces bacon, cooked and chopped
- 4 ounces Cache Valley® Colby Jack cheese, shredded
- ⅓ cup ranch dressing
Steps
- Preheat the oven to 375°F.
- Cut the potatoes and onion into 1 ½ to 2-inch cubes.
- Toss the potatoes and onions with vegetable oil, dried parsley, garlic powder, onion powder, kosher salt, and black pepper in a large bowl until evenly coated. Spread them out on a sheet pan in a single layer.
- Roast the potatoes and onions for 45 minutes, tossing them halfway through for even browning.
- Sprinkle the chopped bacon and shredded cheese evenly over the top. Switch the oven to broil and return the sheet pan to the oven for 2 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and drizzle with ranch dressing before serving.
Notes
Potatoes – Use yellow potatoes for a more buttery flavor or russet for a more earthy taste.
Cheese – Use pepper jack cheese for a kick or cheddar for a more tangy flavor.
