  • 1 tablespoon olive oil
  • 1 cup finely diced yellow onion
  • 4 cloves garlic, minced
  • 1 pound dry chorizo, thinly sliced
  • 2 tablespoons Cajun seasoning (optional, to taste)
  • 1 15-ounce can diced tomatoes
  • 1 cup heavy cream
  • 1 cup Cache Valley® mozzarella, shredded (divided)
  • 1 cup Cache Valley® pepper jack cheese, shredded (divided)
  • 2 12-ounce packages gnocchi
  • 4 ounces fresh baby spinach
  • Salt and pepper to taste
  • Shredded Cache Valley® Parmesan cheese for topping

Steps

  • Heat olive oil in a large skillet over medium-high heat. Add diced onion and sauté until soft and golden, about 2 minutes.
  • Add minced garlic to the pot and sauté for 30 seconds until fragrant.
  • Add the sliced chorizo to the skillet. Toss to brown each side, working in batches if needed.
  • Add the cajun seasoning to taste and sauté for another 30 seconds.
  • Reduce heat to medium-low, then pour in the diced tomatoes and heavy cream. Mix well to combine.
  • Add the gnocchi to the skillet. Cover and simmer until the gnocchi is cooked (plump and tender), approximately 8-10 minutes.
  • Mix the mozzarella and pepper jack shreds together. Gently stir in 1 1/2 cups of the shredded Cache Valley Creamery mozzarella and pepper jack cheese and blend until melted and well combined.
  • Add the spinach and continue to cook until just wilted.
  • Season with salt and pepper to taste.
  • Sprinkle the remaining shredded cheese blend on top of the gnocchi mixture in the skillet.
  • Serve hot, topped with shredded Parmesan cheese for an extra burst of flavor.
